  • 1 tablespoon olive oil
  • 4 chicken Maryland pieces, skin on
  • 4 rashers smoky bacon, diced
  • 1 medium brown onion, peeled, halved and sliced
  • 1 clove garlic, finely chopped
  • 4-5 sprigs of thyme, plus more for garnish
  • 2 heaped teaspoons Dijon mustard
  • 450 ml dry apple cider
  • sea salt and black pepper

Preheat the oven to 180 C. In a large frying pan over medium heat, pour in the olive oil. Brown the chicken pieces all over until they are golden. Remove them from the pan and set aside. Add the onion, garlic, bacon, and thyme to the pan and sauté until the onion softens, ensuring the garlic does not burn. Increase the heat to high. Pour in the cider and let it cook for a few minutes before adding the Dijon mustard. Use a wooden spoon to stir and scrape the tasty bits stuck to the bottom. Take it off the heat. Place the sauce in the bottom of a medium-sized casserole dish. Arrange the chicken pieces in a single layer and spoon some of the sauce over them. Season generously with salt and freshly cracked black pepper. Cover tightly with foil and bake for 35-40 minutes. Afterward, remove the foil and apply more sauce on the chicken before returning to the oven for another 10 minutes. Before serving, take out the cooked thyme and sprinkle about a tablespoon of fresh thyme leaves along with another generous grind of black pepper.
