A few evenings ago, as I returned home from ballet with the girls – we were all STARVING, and I prepared this soup earlier, so it was ready for us in the Dutch oven on the stove.
We served it in bowls, tore off bits of leftover sourdough, sat at the table, and no one uttered a word. We all just DUG IN.
This soup is truly incredible. The hearty noodles, the juicy morsels of chicken, and the harmonious flavors of creamy thyme, garlic, and vegetables, oh my!
I’ve never been an enormous fan of chicken noodle soup, but this one is a turning point for me.
When I first began making this, I envisioned it thick, similar to chicken wild rice soup. Yet, I became completely captivated by the brothier version you see here. (!!) It’s almost like a lighter relative of zuppa toscana – you experience the rich flavor of cream and herbs but with a satisfying slurpy feel typical of soup, which just feels right for chicken noodle, you know? There’s a certain delightful drinkability to it.
I anticipated the leftovers all week long.

- Sauté Vegetables: Heat olive oil in a large Dutch oven over medium heat. Add onions, carrots, and celery; cook them generously for 7-10 minutes, or until they’re very tender and starting to caramelize.
- Seasoning and Herbs: Incorporate garlic, salt, and thyme sprigs; sauté for a minute until it’s wonderfully fragrant.
- Broth and Noodles: Mix in broth and noodles. Bring to a gentle simmer and cook for 10 minutes, or until the noodles become tender.
- Complete: Take it off the heat. Remove the thyme sprigs. Mix in spinach, chicken, and cream. Stir to combine; ensure everything is heated through and the spinach is wilted. (FYI – you may see some oil separating on top, but if you let it rest for 10-20 minutes, that oil will be re-absorbed by the noodles. And if you can’t wait, just give it a stir and you’ll be good to go.)
- Serve: Present with hot crusty bread and sprinkle each bowl with fluffy, freshly grated Parmesan cheese!
