We invited my parents, brothers, and their partners for a dinner on a WEEKNIGHT, and at around 3pm ON THE DAY OF THE GATHERING, I realized I required a strategy. Something manageable yet enjoyable and interesting for the food lovers?

Friends, this recipe was the epitome of group dinner bliss! Herby meatballs, skillet-seared to a lovely golden color, accompanied by a quick yellow curry sauce (gravy? it leans more towards gravy) that is created right in the pan and drenches each meatball in enchantment.

I’ve been enjoying these meatballs alongside the zesty arugula salad from Trader Joe’s, as it adds brightness and freshness, making for a beautiful presentation on the plate.

This is the yellow curry paste I purchase (affiliate link), and I am an unwavering fan. It’s a Thai product, and it is exceptionally good. If you’re interested in making it yourself, this recipe is also EXCELLENT! It’s slightly less potent, so you may want to increase the quantity used.

Steps to Create These Curry Meatballs

Prepare the Meatballs.

Combine and shape! Fresh cilantro or herbs are optional, but I find they enhance the flavor slightly.

Sear the Meatballs.

The searing on the meatballs enhances the flavor. They don’t need to be completely cooked; we’ll simmer them in the sauce to finalize.

Incorporate Shallots and Curry Paste.

They will be sharing the space in the pan with the meatballs! Sauté until soft.

Incorporate Coconut Milk.

And allow it to simmer! I frequently add a cornstarch mixture to thicken the sauce into a gravy-like consistency.

Delicious! You’re Finished!

Serve atop rice with the crunchy peanut and shallot crispies!

  1. Shape Meatballs: Combine meatball mixture and roll into balls. (Now is a good time to begin your rice. Cook as per package instructions.)
  2. Sear Meatballs: Heat oil in a large skillet over medium heat. Place meatballs and let them cook without disturbance for a few minutes until they become brown on one side. Flip them to achieve browning on the other sides as well. The meatballs don’t need to be entirely cooked now; this is just to develop color and flavor.
  3. Curry Sauce: Push the meatballs to the outer edges of the pan to create space in the center. Introduce shallots and curry paste; sauté until softened. Add coconut milk and broth; mix thoroughly. Cover and simmer for 5 minutes until meatballs are fully cooked (165 degrees).
  4. Thicken It: Mix in soy sauce and brown sugar. Whisk cornstarch with water; add it to the pan. As it simmers, the sauce will thicken into a gravy-like consistency that is delightful.
  5. Topping: Chop the peanuts and shallots into a fine crumble.
  6. Serve: Place your meatballs over rice, drizzled with additional curry sauce (dreamy). Top with the peanut shallot crispies. A side salad completes the meal! What a feast!

Notes

If you’re utilizing homemade yellow curry paste, you’ll want to use about 3-4 tablespoons. The paste I purchase is much stronger than my homemade version!

Red curry paste can also be used. Since it’s not as spicy as the yellow type, you should use around 2 tablespoons.

Red curry paste will do just fine! You might want to use 2 tablespoons, depending on the brand of red curry paste you’re using.

How can I make this vegetarian?

Utilize crispy tofu in place of the meatballs! Absolutely delicious!

Is it possible to bake the meatballs instead?

Technically, yes. Bake at 400 degrees for 25 minutes, then add them into the sauce. However, when I attempted this, I found that I didn’t enjoy it as much as the pan-fried version. Pan-frying gives the meatballs color, which enhances the overall dish’s flavor, something that’s missing when you bake them. While baking can be effective, I prefer browning the meatballs!
