This Is My Friend Ang’s Recipe, and It’s The Only Way I Prepare Beef Stroganoff.

This is the sole method I adore for making beef stroganoff. I absolutely love it.

This beef stroganoff is mainly a creamy, savory sauce enriched with roasted mushrooms and caramelized onions, combined with tender shreds of beef mixed in. YEAH.

Here’s how it differs (and exceeds, in my opinion) from a “standard” beef stroganoff:

  • Beef is prepared in the slow cooker, making it super simple.
  • Beef is then shredded, resulting in exceptionally tender bites.
  • Mushrooms and onions along with the gravy are finely chopped and carefully sautéed into a lavish and creamy base. No chunky bits! Hallelujah. Just melt-in-your-mouth flavors.

The technique for this came from my friend Ang (of Ang’s Tortellini Soup fame – she’s serious about her recipes). She’s been trying to persuade me to enjoy beef stroganoff for years, and I’m excited to share that I LOVE THIS BEEF STROGANOFF – not just the taste, but also how straightforward it is to prepare.

  • 9am – begin cooking the beef in the crockpot
  • 5pm – prepare the gravy
  • 6pm – mix in your shredded beef from the crockpot, and dinner is ready.

It’s luxurious, profoundly flavorful, and all the texture elements are refined. Just as they should be.

Egg noodles are the classic choice, but I also ABSOLUTELY adore this served over a baked potato topped with a dollop of sour cream and chives, and I strongly encourage you to try that too.

THIS IS WHY I ADORE THIS RECIPE. It’s incredibly simple. Plus, in my opinion, shredded beef is far superior to chunks of seared beef!

I prefer a beef stroganoff that isn’t a bland gray mass. Look at these delicate mushroom slices, thin and caramelized. Observe the appealing color. YES.

  1. Slow Cook the Beef: Combine all beef ingredients in the slow cooker – chuck roast, water, roasted beef base, salt, onion powder, garlic powder, and black pepper. Cook on high for 4-5 hours.
  2. Cook Your Noodles or Potatoes: When it’s time to start the gravy, boil your noodles or bake your potatoes.
  3. Start the Gravy: Sauté onions and mushrooms in the butter over medium heat until they achieve a rich color, around 15 minutes. Add garlic, thyme, tomato paste, Better Than Bouillon, and flour; sauté for a few more minutes.
  4. Simmer and Finish: Add Worcestershire sauce, Dijon, and water. Bring to a simmer. Gradually stir in cream until reaching your desired color. Mix in shredded beef into the gravy (I used about half of the beef and reserved the remaining for later).
  5. Serve: Garnish with chives and sour cream, and plate over egg noodles or a baked potato (my favorite)!
