Exciting news: moving forward, any creamy curry I whip up will definitely need a sprinkle of shallot crispies on top.

Wow! This entire shrimp curry creation is incredibly tasty. Could it be my top dish from the entire SOS series to date? Is that allowed to say? It boasts fantastic flavor from around 5 key ingredients. (I often use this Thai Kitchen red curry paste and always enjoy it. For yellow curry, I prefer Maesri.)

Also, if you can find a little extra energy, those shallot crispies on top! Diving into all the saucy nooks! I can’t stop raving about them.

Fried shallots are not a novelty – they’re a beloved and common Southeast Asian topping, but to my understanding the incorporation of fried panko is just the quirky twist of a hungry home cook in Minnesota wanting to amplify that shallot-y crunch. (That’s me.)

I serve the shrimp curry and rice at the table so they always have that choice, and maybe one day they’ll be as enthusiastic about it as I am. However, I usually also present a plate of plain shrimp (like, simply rinsing the curry sauce off a few, honestly) and extra steamed green beans or bell pepper strips. They often choose the straightforward option, adding butter or salt or ready-made sauces that they’re used to. Works for everyone without switching up ingredients! ❤️

You may opt for a different protein if preferred, but my suggestion for shrimp: they are delicate and flavorful and can be tossed on top to cook in just 5 minutes. Hard to surpass.

Instructions

  1. Create shallot crispies (optional): Heat the oil over medium heat in a large skillet. Add the shallots; sauté until golden, about 5-10 minutes. Incorporate panko and mix with the shallots in the pan; sauté for another couple of minutes until the entire mixture is golden. Transfer to a small bowl and toss with herbs and a pinch of salt.
  2. Begin the curry: Wipe out the pan. Increase the heat back to medium. Add the oil, curry paste, garlic, and vegetables; allow to cook for a few minutes. Stir in coconut milk; simmer until the sauce thickens slightly and vegetables are beginning to soften, about 5 minutes.
  3. Incorporate shrimp: Place the shrimp on top of the gently bubbling curry. The shrimp will essentially steam/poach in the sauce! Simple. After about 2-3 minutes, turn the shrimp so they can finish cooking on the opposite side. Once cooked, they will start to curl and become fully opaque – in this image, they’re about halfway done.
  4. Season: Mix in the fish sauce and brown sugar. Taste and adjust – increase spiciness with chili crisp, make it saltier with fish sauce, etc.
  5. You’re all set! Yum. Serve the curry over some rice, and finish with a sprinkle of the shallot crispies (OMG).

Notes

For the vegetables: I usually use sweet red peppers cut into rings, and green beans chopped into halves or thirds (about a generous cup of each).

Other vegetable alternatives: Fresh spinach is also great (needs hardly any cooking time – only about 1 minute, so add right at the end). Frozen mixed vegetables would work too (also don’t need much cooking time here – probably just 4-5 minutes).

More flavor: Adding a touch of lemongrass or lime to the sauce is also refreshing and delicious! I didn’t want to go overboard with the ingredients so I omitted it, but if you have some, toss it in!
