I’ve created numerous breakfast burritos over time, but nothing compares to these. The silky scrambled eggs, the garlic-roasted vegetables, the deep flavor of the cheese, and the kick from the creamy sauce are just fantastic.

I have a unique take on sheet pan breakfast burritos (yes, it’s a niche topic): many recipes will instruct you to slice the cooked eggs and veggies into rectangles. If you enjoy doing this, please continue. However, I’ve found the appearance of the eggs to be unappealing. The tortilla won’t conform around them properly – it feels more like a flat sandwich than a compact, nicely rolled breakfast burrito.
Instead, here’s my method. I bake the eggs until they’re slightly set, then stir them briefly, and place them back in the oven to finish cooking. The result is scrambled eggs, but made on a sheet pan. They fit perfectly inside a breakfast burrito, while maintaining the convenience of the sheet pan method.
In summary: the taste of these is likely the best I’ve experienced in a homemade breakfast burrito. If you wish, add meat, but with the Gouda’s smokiness and the earthy flavors of the roasted garlic veggies, plus the chipotle sauce if you’re able to… I’ve never found myself missing the meat at all.

Combine vegetables with a scoop of Better Than Bouillon Roasted Garlic Base for a tremendous flavor enhancement. I love to really roast them until they’re slightly crisp around the edges.

- Roast: Roast vegetables for 20 minutes; then stir, and roast for another 15-20 minutes until potatoes are tender and peppers and onions are slightly browned.
- Eggs: Change the oven temperature to 350 degrees. Whisk the egg mixture; pour directly onto the sheet pan with the veggies. Bake for 7 minutes.
- Bake: Gently move the eggs around the pan until they are “scrambled” a bit (they should still be a little wet). Return them to the oven for 3-6 minutes until they are set.
- Burritos: Fill tortillas with the egg mixture, refried beans, smoked gouda cheese, and cilantro. Wrap them tightly in the tortilla, and roll it up in foil.
