This version is genuinely brothy.)

- Onions and Garlic: Add the onions and garlic to the sausage. Sauté for 5-7 minutes until softened and aromatic. Just a heads-up your whole house will smell AMAZING.
- Potatoes and Broth: Toss in the potatoes and the broth. Simmer for 7-10 minutes, until the potatoes are soft. (Be cautious not to cook it too long, as the potatoes will start breaking down.)
- Finish with Cream: Stir in the kale and heavy cream. Simmer for 5 minutes until kale has wilted.
- Serve: Season with salt and pepper, sprinkle with Parmesan for added flavor, and dunk into that amazing broth with hot crusty bread.
Notes
Broth: I always use 6 cups of water + 2 tablespoons of Better Than Bouillon chicken flavor base. It’s incredible. Highly recommend. If you don’t have this, you may need to sprinkle in more salt.
Pork Fat: This soup will display tiny beads of pork fat distributed throughout and/or floating on top. That’s a good sign—it indicates amazing flavor and a luscious mouthfeel. These will blend in as it gently simmers, and they’ll rise to the surface as it cools. To reincorporate, just heat it again and give it a stir.
Bacon: Controversial opinion, but I don’t believe it’s necessary, which is why I omitted it. You receive plenty of flavor already from the Italian sausage. I’ve never had this and wished it included bacon.
Potato Peels vs. No Peels: If you want to save time, opt for baby potatoes and simply quarter them—you don’t have to peel them! It has a slightly different, earthier taste (as potato peels do), but can confirm, it’s still tasty.
White Wine: For weeks now, I’ve contemplated adding white wine to this recipe to deglaze the pot after the sausage, onion, and garlic; in my mind, it would introduce a pleasant acidity to a very savory, rich broth. However, I’ve made this so many times and never had white wine on hand, and I’ve enjoyed every batch immensely just as it is. Let me know if you try it with white wine!
