Cilantro Pesto Is My New Favorite Shade Of Green.

This chunky green concoction has become a true companion.

It has a zesty lime kick, a hint of spice, and did I mention its chunkiness? Yes, while cilantro, lime, and jalapeño dance in the flavor festival, the true champion here is the pistachios. They add a creamy, salty, nearly roasted taste while maintaining just the right amount of substantial texture to keep it exciting to spread / dollop / enjoy.

This is cilantro pesto, or cilantro chutney – in essence, a delightful, spoonable sauce packed with garlic, lime, cilantro, and jalapeño. And surprisingly, pistachios.

I’ve been slathering it on those Trader Joe’s scallion pancake egg wraps (SO delicious):

I’ve also been generously dolloping it over these yellow rice and chicken bowls (recipe for the bowls on the way):

And guess what? Today I added a spoonful on top of my chicken noodle soup bowl. There are no hard rules. Just follow your instincts.

This is very reminiscent of that classic green sauce from ages ago, but significantly thicker, chunkier, and spreadable. I think you’ll enjoy it.

  2. Dig in! I enjoy this on bowls, soups, pizza, eggs, sandwiches, and wraps… it’s delicious on nearly anything. Store it in an airtight container in the fridge for 3-4 days.

Notes

You might need a spatula to scrape it down as you go since it tends to have a thicker consistency. You can also add a splash of water to keep it moving in the blender. 

All cilantro bunches vary in size, so for a smaller one, I would use two bunches. Aim for about 1.5 – 2 cups to ensure sufficient body.
