During difficult times, we frequently seek solace in familiar activities that bring us comfort and tranquility. This could involve listening to music, taking a stroll on the beach during sunset, reading, meditating, or praying. For me, cooking has always been a refuge; it allows me to be creative, nurturing, and productive simultaneously. Around the globe, individuals are encountering various struggles – be it due to illness, isolation, exhaustion, fear, or lack of income, along with the disruption of what used to be normal life. Before the onset of the virus, self-isolation, and ‘social distancing’; lockdowns, and the scarcity of money, food, or healthcare for all those in need.

I find myself largely untouched by the most severe challenges that others face. Aside from adjusting to working from home, missing my friends and family, missing weddings, my husband needing to remove his scrubs at the door upon returning from work, and the occasional shortage of toilet paper, my life continues quite normally. However, it is deeply unnerving and exhausting to navigate the uncertainty of this period – with the unknowns of what lies ahead, the potential for more people to fall ill and pass away, and the indeterminate end of this situation.

I wish for you to discover something that offers you comfort and peace, and if you share my love for cooking, this recipe could be a simple and delicious treat to prepare for yourself and your loved ones.

Ingredients:

  • 1 3/4 cups self-rising flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup light brown sugar
  • 2/3 cup chopped pecans
  • 1/2 cup pepitas
  • 1/2 cup vegetable oil
  • 1/3 cup milk
  • 1 cup cooked, mashed pumpkin
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 2 eggs

Preheat the oven to 180 C. Prepare a 12-cup muffin tin by lining it with paper cases. To make the mashed pumpkin, roast approximately 500 g of Kent pumpkin (skin on) at 180 C, drizzled with a bit of canola oil, for about 30 minutes or until tender. Once it’s cool enough to handle, scoop the flesh out of the skin and mash it with a fork. For the muffins, sift the flour, cinnamon, nutmeg, salt, and sugar into a medium mixing bowl. Stir in the pecans thoroughly. In a separate bowl, whisk together the vegetable oil, milk, mashed pumpkin, maple syrup, vanilla extract, and eggs. Quickly combine the dry ingredients with the wet mixture. Avoid overmixing; otherwise, the muffins may become tough. Divide the mixture evenly among the muffin cups and sprinkle pepitas on top. Bake for 25 to 30 minutes until the muffins spring back gently when pressed. Enjoy them warm or at room temperature, either plain or with butter and a drizzle of honey.

**Pumpkin, Pecan, and Pepita Muffins: A Comforting Treat for Challenging Times**

During periods of uncertainty and stress, comfort foods provide a sense of warmth and familiarity that’s incredibly soothing. Among these delightful treats, pumpkin, pecan, and pepita muffins shine as a scrumptious choice, merging the rich tastes of autumn with the satisfying crunch of nuts and seeds. These muffins not only serve as a delicious escape but also come with various nutritional advantages that can bolster well-being in tough times.

**The Allure of Pumpkin**

Pumpkin, the quintessential autumn ingredient, is the highlight of these muffins. Its inherent sweetness and moist consistency make it an excellent base for baked goods. Beyond its culinary charm, pumpkin is a nutrient powerhouse. High in vitamin A, it bolsters vision and immune health, while its fiber aids digestion and fosters a sense of fullness. The vibrant orange color of pumpkin serves as a visual reminder of the season’s splendor, adding a hint of autumnal allure to your kitchen.

**Pecans: A Nutty Delight**

Pecans impart a delightful crunch and buttery taste to the muffins. These nuts are more than a flavorful addition; they provide healthy fats, protein, and essential minerals like magnesium and zinc. Furthermore, pecans are abundant in antioxidants, which help mitigate oxidative stress within the body. Integrating pecans into your diet can promote heart health and deliver a satisfying textural contrast in baked treats.

**Pepitas: Tiny Seeds with Big Benefits**

Pepitas, or pumpkin seeds, are another essential ingredient that enhances both the flavor and nutritional value of these muffins. These small, green seeds are loaded with protein, healthy fats, and an array of vitamins and minerals, including magnesium, iron, and zinc. Known for their anti-inflammatory properties, pepitas can aid heart health and immune function. Their gentle nutty taste complements the sweetness of the pumpkin and the richness of the pecans, creating a well-balanced medley of flavors.

**A Recipe for Comfort**

Crafting pumpkin, pecan, and pepita muffins is a straightforward yet satisfying process. Baking can be therapeutic, serving as a creative outlet and a source of fulfillment. The tantalizing aromas of spices such as cinnamon, nutmeg, and cloves wafting through the kitchen can evoke nostalgia and warmth, enhancing the comforting experience.

To prepare these muffins, begin by mixing flour, baking powder, baking soda, and spices in a bowl. In another bowl, combine pumpkin puree, eggs, sugar, and melted butter. Gradually add the dry ingredients into the wet blend, folding in chopped pecans and pepitas. Spoon the batter into muffin tins and bake until golden brown. The result is a batch of muffins that are moist, flavorful, and ideal for sharing with family and friends.
