I Knew My Spouse Would Adore This Meal.

However, I didn’t want to sway him, so I simply waited for his response to see if I was correct – and after one bite, he exclaimed “whoa, that’s fantastic.”

Tender pan-seared chicken with a golden crust, surrounded by a creamy gnocchi infused with shallot, tomato, and cream? Absolutely. You’re spot on. It is incredibly, incredibly tasty.

I’m all for Store-Bought Gnocchi in this case to keep it super easy for a weeknight meal. DeLallo is my preferred choice for various Italian products, including gnocchi! They offer mini gnocchi, standard gnocchi, gluten-free gnocchi?! So many choices. Locally in the Twin Cities, I found a wide selection at Cub Foods! Alternatively, you can purchase online.

We paired it with a straightforward green salad as usual, making it a lovely family dinner that took just 30 minutes. Bjork and I polished off our plates, while one of my daughters came back for seconds on the gnocchi.

I can also confirm this works wonderfully with chicken meatballs!

This dish definitely has a proposal-worthy flavor profile, and the tastes are just out of this world.

How To Prepare This Chicken and Gnocchi

Sear the Chicken.

I take two chicken breasts, cut in half horizontally for thinner pieces, and generously coat them with a versatile spice blend.

Sauté Your Shallots.

Place the chicken aside and use the same skillet!

Incorporate Gnocchi and Broth.

Allow it to cook for a few minutes! One-pan magic!

Incorporate Cream and Spinach.

And season with salt, pepper, thyme, Parmesan, and any other additions you enjoy. Red pepper flakes are excellent.

Return Chicken to the Skillet.

It’s a showstopper. Truly beautiful and comforting.

Instructions

  1. Chicken: Heat the oil in a large, wide skillet over medium-high heat. Season the chicken on both sides (you may need more than 1 tablespoon depending on your seasoning blend – I usually just eyeball it until they’re evenly coated). Add chicken to the hot pan; cook for 3-4 minutes per side until golden brown and cooked through (165 degrees F). Remove chicken and set aside.
  2. Shallots: In the same pan, add the oil, shallots, and sun-dried tomatoes. Sauté for 5 minutes until the shallots are golden and softened.
  3. Gnocchi: Add the gnocchi and broth. Simmer for another 5 minutes, until the gnocchi are tender.
  4. Cream: Add the cream and spinach; stir to combine. Keep it at a low simmer for a few minutes to further thicken the sauce.
  5. Season: Add salt, pepper, and fresh thyme leaves to taste. Add chicken back in.
  6. Serve: Serve pieces of chicken with a scoop of the creamy gnocchi and a spoonful of the extra sauce over the top. Add a sprinkle of Parmesan on top, or into the sauce, for even more flavor. SO yum.

Notes

If you’re not into sun-dried tomatoes, I actually prefer to use the DeLallo tomato bruschetta which is a bit more juicy and less chewy. Love the flavor of it. But sun-dried tomatoes are easier to find and those also work great!

For the broth, I’m using Better Than Bouillon chicken base mixed with water whenever possible. It just has more robust flavor. For this, I used 1 heaping tablespoon mixed with my 2-ish cups water.
