I didn’t want to bias him, so I simply waited for his response to ascertain if I was right – and after a single taste, he exclaimed, “whoa, this is fantastic.”
Succulent pan-seared chicken with a lovely golden crust, nestled in a creamy gnocchi infused with shallot, tomato, and cream? Absolutely. You are spot on. That’s extraordinarily delicious.
I’m a supporter of Store-Bought Gnocchi for this dish to keep it super uncomplicated for a weeknight. DeLallo is my preferred choice for numerous Italian products, including gnocchi! They offer mini gnocchi, regular gnocchi, and even gluten-free options?! There are countless selections. I found plenty of varieties at Cub Foods in the Twin Cities! Alternatively, you can purchase them online.
We paired this with our usual simple green salad, making for a delightful family dinner that took just 30 minutes. Bjork and I polished off our plates, and one of my daughters even returned for seconds on the gnocchi.
Can also confirm that this dish pairs wonderfully with chicken meatballs!

How To Prepare This Chicken and Gnocchi
Pan Fry the Chicken.
I utilize two chicken breasts, horizontally sliced so they’re thinner, and coat them generously with an all-purpose seasoning mix.
Cook Down Your Shallots.
Set aside the chicken and use the same pan!
Add Gnocchi and Broth.
Let everything cook for a few minutes! One pan wonder!
Incorporate Cream and Spinach.
And don’t forget salt, pepper, thyme, Parmesan, and any other ingredients you fancy. Red pepper flakes add a nice touch.
Chicken Returns to the Pan.

Season the chicken both sides (you may require more than 1 tablespoon based on your spice mix – I typically eyeball it until they’re evenly covered). Add chicken to the hot pan; cook for 3-4 minutes on each side until golden brown and fully cooked (165 degrees F). Remove chicken and set aside.
- Shallots: In the same pan, add the oil, shallots, and sun-dried tomatoes. Sauté for 5 minutes until the shallots are golden and softened.
- Gnocchi: Add the gnocchi and broth. Simmer for another 5 minutes, until the gnocchi are tender.
- Cream: Stir in the cream and spinach; combine thoroughly. Keep at a low simmer for a few minutes to thicken the sauce further.
- Season: Season with salt, pepper, and fresh thyme leaves to taste. Return chicken to the pan.
- Serve: Plate pieces of chicken with a scoop of the creamy gnocchi and a drizzle of the extra sauce on top. Sprinkle with Parmesan, or stir it into the sauce for added flavor. SO delicious.
Notes
If sun-dried tomatoes aren’t your preference, I actually favor the DeLallo tomato bruschetta which is juicier and less chewy. I love the flavor! However, sun-dried tomatoes are easier to find and work perfectly!
For the broth, I use Better Than Bouillon chicken base mixed with water whenever possible. It offers a richer flavor. For this, I mixed 1 heaping tablespoon with about 2 cups of water.
