These Stacked Roasted Sweet Potatoes, as I’ve dubbed them, received instant approval from my entire family the very first time I prepared them.

Seriously, HOW BEAUTIFUL!

I ADORE the caramelized edges of these sweet potatoes. They look so lovely. If your caramelization isn’t as intense as you wanted, you can toss the sweet potatoes in a skillet with a bit of butter to enhance the caramelization on the open sides before serving.

My family loves these. We’ve kept them in our meal rotation for three weeks now, and my husband rates it a “10/10 for this dish.” Great macros, flavorful, and perfect for leftovers or meal prep. I hope you enjoy them too!
