  • 160 ml double cream (my favorite is Maleny Dairy)
  • 40 g strong cheddar, shredded.

Preheat the oven to 180 C. Arrange the cauliflower in a single layer on a baking sheet and drizzle with olive oil. Season generously with salt and pepper, then roast for 35-45 minutes, until the cauliflower turns a deep golden brown, turning once throughout the cooking time. A few charred edges are perfectly fine; they contribute fantastic flavor to the cauliflower. In one medium or 2 smaller baking dishes suitable for serving, place the roasted cauliflower, stacking it slightly if necessary. Sprinkle the walnuts and thyme leaves over the top. Spoon the cream into the center of the cauliflower and add the grated cheese on top. Bake for 15 minutes until the cheese is melted and the cream morphs into a gooey, bubbling sauce. Serve immediately while hot.
