Steps to Prepare Detox Chicken Soup

This soup comes together in a mere 30 minutes through 3 simple steps! Here’s how I do it:

  1. Sauté the veggies. In a large soup pot or dutch oven, heat olive oil on medium-high heat and sauté onion, celery, and carrots, stirring occasionally for about 5 minutes. Add garlic and mushrooms, cooking for an additional 3 minutes.
  2. Allow the soup to simmer. Stir in the chicken broth, bay leaves, turmeric, crushed red pepper, sea salt, pepper, and chickpeas, bringing to a boil. Mix in the shredded rotisserie chicken, cover, and reduce the heat to a simmer for 15 to 20 minutes. If using boneless skinless chicken breasts, add them with the stock and simmer for about 25 minutes until cooked through. Remove the breasts, shred them with two forks, and return the chicken to the pot.
  3. Add kale and serve! Add the chopped kale and let it simmer for another 5 minutes. Discard bay leaves and season with more salt and pepper if necessary. You might want to sprinkle some fresh parsley on top. Enjoy!
