A few months back, I watched a video by Dini at Prep and Rally, where she transformed an almond flour tortilla using the French Toast technique!
The tortilla is dipped in eggs mixed with a splash of maple syrup (and milk, if you’re like me) and cooked until they become these delightful golden rounds that look like a crepe but taste like French Toast!

Is it a tad absurd? Absolutely! Just roll with it!
It was a playful and cute video, but this recipe is one we frequently recreate at home. I whip them up about every 1-2 weeks now. I can’t tell you how many photos I’ve seen on Instagram from all of you who have tried them already! These are the tortillas I prefer:
My daughters adore them at breakfast, and so do I—additionally, they’ve become an unexpected favorite for snacks and lunchboxes! After you French Toast the tortillas, simply roll them up with jam and yogurt and store them in the fridge for a quick snack! (No, that’s not a ham and cheese roll-up; it’s jam and yogurt—but hey, who knows!)

Whisk together your egg mixture.
Just like making French Toast! Eggs, maple syrup, and a splash of milk or cream.
Coat the tortillas.
I always use Siete almond flour tortillas for this dish. They don’t soak up the mixture much, but they still get a nice coating!
Cook and roll.
I like to melt a small amount of butter in the skillet, then cook those little crepes on each side until they are beautifully golden!
Roll, top off, and serve!
