Taco, Meet Egg Roll.

Are you really prepared for this? What we have here is akin to an egg roll stuffing (meat, cabbage, carrots, soy sauce, garlic, ginger) interfacing with a deep-fried taco (flour tortilla, fresh vegetables on top, gochujang sauce for serving) and the whole experience is much like a folded sandwich.

That’s definitely a yes from me.

My buddy Brandon has been raving about these for weeks. I realize the whole trend of stuffing meat into tortillas is quite the sensation on social media (smash burger tacos, chicken Caesar smash tacos, etc.), but the idea always felt a bit unusual to me.

Until I tasted these – now I’m a convert.

Aside from being extremely tasty (don’t skip the gochujang sauce, it’s ABSOLUTELY DIVINE) – these are surprisingly quick to whip up. I acknowledge some of the recipes in the recent SOS series leaned a bit more toward “involved” than my usual style – there were a few extras I simply couldn’t forgo. Shallot crispies, panko coating, house sauce, and so forth. So let’s view this as a BONUS SOS recipe. You can effortlessly prepare this in 20 minutes without breaking a sweat.

I hope you enjoy it! Also, thanks to Brandon for introducing this concept to me! YOU WERE SPOT ON!

Egg Roll Tacos

Toppings

Instructions

  1. Prepare Filling: Combine the ground meat, soy sauce, chili crisp, garlic, ginger, and vegetables together. I typically mix everything with my hands.

  2. Distribute Filling: Press the mixture onto one side of each tortilla. I find it easiest to prepare them all at once, before you begin cooking.

  3. Fry Tacos: Heat a skillet on medium-high heat. Add the oil. Working in batches, place the tacos, meat-side down, and cook for 3-4 minutes until they are browned. Flip to the backside for 1 minute to achieve a slight golden color, and then flip one more time to ensure it’s cooked through (165 degrees for chicken and turkey, 160 for ground pork).

  4. Garnish and Serve: Garnish with extra fresh cabbage, cilantro or green onions, and your choice of sauces. Fold in half – it resembles a blend between a taco and a sandwich, but has an egg roll flavor. I *adore* these with the gochujang sauce!
