  • baking powder – serves as a leavening agent to allow the baked oatmeal to rise.
  • almond milk – I utilized unsweetened almond milk, but any milk can be used in this recipe for soaking the oats.
  • eggs – adds protein and binds the baked oatmeal together. If vegan, you may substitute with 2 flax eggs (2 tablespoons ground flax + 6 tablespoons warm water).
