My spouse often remarked that the sole function of cauliflower was to serve as a transport for cheese sauce. Considering his childhood recollections of overcooked cauliflower prepared in the pressure cooker – soggy, see-through, and nearly flavorless – it has taken me a while to spark his enthusiasm for the delights of roasted, grilled, and warm salad versions of cauliflower.

Ingredients: (serves 4 as a side and 2 as a main)

  • 1 head of cauliflower, separated into medium-sized florets
  • 1 tablespoon olive oil
  • sea salt and freshly ground black pepper
  • 2 sprigs fresh thyme
  • 1/3 cup walnuts, chopped into small pieces
  • 160 ml double cream (my favorite is Maleny Dairy)
  • 40 g strong cheddar, grated.

Preheat the oven to 180 C. Arrange the cauliflower in a single layer on a baking tray and drizzle with olive oil. Season generously with salt and pepper, then roast for 35-45 minutes until the cauliflower is a deep golden brown, turning it once during cooking. A few charred spots are fine; they provide incredible flavor. In one medium-sized or two smaller baking dishes suitable for serving, place the roasted cauliflower, piling it up if necessary. Sprinkle the walnuts and thyme leaves over the top. Spoon the cream into the center of the cauliflower and sprinkle the grated cheese over it. Bake for 15 minutes until the cheese has melted and the cream turns into a bubbling, oozy sauce. Serve while it’s hot.
