I recently had my parents, brothers, and their partners over for an evening meal on a WEEKNIGHT, and at about 3pm ON THE DAY OF HOSTING, it dawned on me that I needed a strategy. Something manageable yet exciting, intriguing, and tasty for the food enthusiasts?!
Friends, this recipe was absolute perfection for a group dinner! Herby meatballs, pan-seared to achieve that wonderful golden color, paired with a quick yellow curry sauce (gravy? it’s closer to gravy) that is made right in the skillet and envelops each meatball in delight.

I’ve been pairing these meatballs with the zesty arugula salad from Trader Joe’s because it’s bright and fresh, making it look really stunning on the plate.
This is the yellow curry paste I purchase (affiliate link), and I’m a dedicated fan. It’s a Thai brand / Thai product, and it is absolutely fantastic. If you opt for homemade, this recipe is just as delightful! It’s slightly less potent, so you may need to use more of it.
How To Prepare These Curry Meatballs
Prepare the Meatballs.
Combine and shape! Fresh cilantro or herbs are optional, but they certainly help enhance their flavor just a touch more.
Sear the Meatballs.
Browning the meatballs adds depth of flavor. They don’t have to be completely cooked; we will simmer them in the sauce to finish them off.
Incorporate Shallots and Curry Paste.
They will share the skillet with the meatballs! Sauté until they are tender.
Pour in Coconut Milk.
And simply let it simmer! I often include a cornstarch mixture to thicken the sauce to a gravy-like texture.

- Create Meatballs: Combine the meatball mixture and shape into balls. (Also, now is a good moment to start your rice. Prepare according to package instructions.)
- Sear Meatballs: Warm oil in a large skillet over medium heat. Introduce meatballs and cook undisturbed for a few minutes until browned on one side. Turn them over for browning on the opposite sides too. The meatballs don’t need to be completely cooked at this stage; you’re just adding color and flavor.
- Curry Sauce: Push the meatballs to the edges of the skillet to clear some space in the center. Add shallots and curry paste; sauté until tender. Pour in coconut milk and broth; mix everything together. Cover and simmer for 5 minutes until meatballs are thoroughly cooked (165 degrees).
- Thicken It: Mix in soy sauce and brown sugar. Whisk the cornstarch with water; add to the skillet. As it simmers, the sauce will thicken to a delightful gravy-like texture.
- Topping: Finely chop the peanuts and shallots together into a crumbly texture.
- Serve: Place the meatballs over rice, with a serving of extra curry sauce (dreamy). Top with the peanut shallot crispies. Add salad on the side! What a feast!
Notes
If you’re opting for homemade yellow curry paste, you may want to use approximately 3-4 tablespoons. The version I purchase is considerably more potent than my homemade version!
You could substitute with red curry paste. Since it’s not as spicy as the yellow I use, approximately 2 tablespoons should suffice.

Ground chicken or ground beef can also be used for these meatballs. I tend to prefer turkey over chicken, but honestly, both will work splendidly! And beef paired with yellow curry is among my favorite flavor combos. It would taste amazing.
Red curry paste is a suitable alternative! You might want to use 2 tablespoons based on the brand of red curry paste you select.
Swap in crispy tofu for the meatballs! SO delicious!
In theory, yes. Bake at 400 degrees for 25 minutes, then incorporate them into the sauce. However, after attempting this, I didn’t find it as enjoyable as the pan-fried variation. The pan-frying provides color and flavor to the meatballs, which is somewhat absent in the baking method. Technically baking is an option, but I favor browning the meatballs!
