This Quickly Became One Of My Top Favorite Desserts.

This could very well be my favorite dessert, definitely in my top five. I adore it!

Banoffee Pie is a British treat featuring a thick layer of toffee or caramel atop a graham cracker base, adorned with bananas and whipped cream. I discovered it through a video on my discovery feed – thanks, Amy Nash!

For the past few months, we’ve launched a tradition in our home known as “Family Dessert Night” where I prepare a fun dessert each Thursday night, simply for the joy of it.

Sometimes it’s just the family, and other times we invite friends. It has truly become a weekly highlight for us and offers a wonderful reason to gather with others over a shared passion for dessert.

And Banoffee Pie has consistently been THE CLEAR WINNER during our Family Dessert Nights!

Take note: a small slice will be sufficient since it’s extremely rich. However, I can almost guarantee you’ll find yourself returning to the fridge multiple times for “just one more bite” until it’s all gone. It’s creamy, rich, dense, salty-sweet, and utterly amazing.

How To Prepare Banoffee Pie

Prepare a Graham Cracker Crust.

Honestly, I live for a graham cracker crust. Take a nibble of the warm buttery crumbs before pressing them into the pan and tell me that it’s not among the best things you’ve ever tasted.

Create the Toffee Layer.

I utilize timers and move at a slow pace. Set it for 5 minutes and stir constantly. (Apologies for the stained burner in this photo! Oops)

Transfer Toffee Into The Crust.

Pour your toffee layer into the prepared crust! Such a gratifying experience! Chill in the fridge, or allow it to cool at room temperature for a short while.

Add Bananas and Whipped Cream.

Arrange your sliced bananas and layer the whipped cream on top!

Cut and Serve!

Your slices should be cleanly cut, yet soft enough to be extremely enjoyable to consume. Like, REALLY ENJOYABLE. 🤤

Advice and Tips

If you prefer adhering to a schedule (like me!) – here’s the routine I generally follow:

  • Morning: prepare the graham cracker crust; allow it to cool
  • 2pm: prepare the toffee layer; let it sit at room temperature
  • 4pm: prior to friends arriving, layer with bananas and whipped cream and place it in the fridge
  • 6pm: remove from fridge, let it rest for 30 minutes and serve

This process allows for a light caramelization and flavor development. Avoid boiling vigorously, but gentle bubbling with constant stirring is acceptable!
  3. Complete Filling: Incorporate sweetened condensed milk; stir well. Set a timer for another 5 minutes; bring to a gentle boil for 3-4 minutes while constantly whisking or stirring. The mixture will darken to a medium brown color and thicken slightly in consistency.
  4. Cooling Time: Pour the toffee into the cooled crust – it should be thickened yet still smooth enough to pour. Allow it to cool on the counter for 1-2 hours until it is cool and touch-dry. (If it seems overly loose, you can place it in the fridge for a few hours to set.)
  5. Whipped Cream: Using an electric mixer, whip the heavy cream with sugar and vanilla until you achieve medium peaks.
  6. Finishing Touches: Once the top is set, lay the sliced bananas in a single layer on top. Spread the whipped cream and finish with chocolate shavings.
  7. Serving: You can serve this at room temperature or chilled. (If it’s been in the fridge, give it 15-30 minutes to rest on the counter before serving for the best texture.) I recommend enjoying this on the same day, as it tends to get soggy overnight, and the bananas will brown.

Additional Notes

Leftovers: I ADORE this pie when it’s cold – genuinely ADORE IT. However, it tends to get a bit wetter and messier after a night in the fridge (the bananas and whipped cream release some liquid and the bananas begin to brown). For that reason, I typically make and serve it on the same day, enjoying any leftovers myself the following day.

Depending on my cooking setup, I’ve had instances where I end up with small browned bits in the caramel due to butter and brown sugar caramelizing. If that happens to you, don’t be alarmed! It’s completely fine and absolutely delicious.
