In my region, flour has turned into a rare resource, and to satisfy my baking cravings, I opted to prepare a recipe that incorporated buckwheat flour, the only option available to purchase this week. After discovering a few recipes, I ultimately developed a hybrid of my own, using as a foundation a recipe from Nigella Lawson and another from David Lebowitz. They are incredibly rich, soft, and intensely chocolaty. Moreover, they are the finest gluten-free cookies I’ve created; achieving a good, chewy-soft gluten-free cookie is quite a challenge, making this a double victory.

Ingredients: (yields 12)

  • 125 g dark chocolate (70% cocoa solids)
  • 25 g cocoa powder
  • 125 g buckwheat flour
  • 1/2 teaspoon baking powder
  • 60g softened butter
  • 125 g soft brown sugar
  • 1 tablespoon strong espresso
  • 1 teaspoon vanilla paste
  • 2 eggs
  • 150 g dark chocolate chips
  • 1/2 teaspoon sea salt (I prefer Maldon)

Begin by preheating the oven to 170 C. Melt the dark chocolate in the microwave or using a bowl over simmering water. Sift together the cocoa, buckwheat flour, and baking powder. In a separate bowl, beat together the butter, brown sugar, vanilla, and espresso until smooth. Incorporate the eggs one by one, beating until fully mixed. Add the flour mixture and, using a wooden spoon, combine well. Fold in the chocolate chips thoroughly. Line two cookie trays with non-stick paper and place rounded tablespoons of the mixture on the trays, spaced about 6 cm apart. The mixture should be very soft and pliable. Bake for 10 – 12 minutes until the edges are firm yet the centers remain quite soft. Allow to rest on the trays for several minutes before transferring to a baking rack to cool. If you can’t wait, the super soft cookies may collapse, resulting in a chocolate mess.

**Decadent Triple Chocolate Cookie Recipe for Difficult Times**

During times of doubt and pressure, few things can match the soothing comfort of a warm, freshly baked cookie. For those who adore chocolate, the pinnacle of indulgence presents itself in the shape of triple chocolate cookies. These sumptuous delights are ideal for lifting moods and providing a moment of happiness on tough days. Below is a recipe that marries rich cocoa, luscious milk chocolate, and bold dark chocolate to craft cookies that are bound to please.

**Ingredients:**

– 1 cup (2 sticks) unsalted butter, softened
– 1 cup granulated sugar
– 1 cup packed light brown sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 2 cups all-purpose flour
– 2/3 cup unsweetened cocoa powder
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 cup milk chocolate chips
– 1 cup dark chocolate chips
– 1 cup white chocolate chips

**Instructions:**

1. **Preheat and Prepare:**
Set your oven to 350°F (175°C). Prepare baking sheets with parchment paper or silicone mats to avoid sticking.

2. **Cream Butter and Sugars:**
In a large bowl, mix the softened butter, granulated sugar, and brown sugar together until light and fluffy, which should take about 2-3 minutes with an electric mixer.

3. **Add Eggs and Vanilla:**
Incorporate the eggs one at a time, ensuring each is fully blended before adding the next. Mix in the vanilla extract.

4. **Combine Dry Ingredients:**
In another bowl, whisk the flour, cocoa powder, baking soda, and salt together. Slowly add the dry ingredients to the wet mixture, mixing until just combined.

5. **Fold in Chocolate Chips:**
Carefully fold in the milk, dark, and white chocolate chips until they are evenly dispersed throughout the dough.

6. **Shape and Bake:**
Using a cookie scoop or tablespoon, place rounded balls of dough on the prepared baking sheets, ensuring about 2 inches of space between each cookie for spreading.

7. **Bake to Perfection:**
Bake in the preheated oven for 10-12 minutes, or until the edges are firm yet the centers still appear slightly soft. Keep in mind that cookies will continue to bake on the sheet after being taken out of the oven.

8. **Cool and Enjoy:**
Let the cookies cool on the baking sheets for about 5 minutes before moving them to wire racks to cool completely. Savor warm or store in an airtight container for up to a week.

These triple chocolate cookies offer more than just a delightful treat; they serve as a reminder of simple joys that can bring comfort and cheer. Whether shared with family, friends, or relished alone with a cup of tea or coffee, these cookies provide a delicious way to discover solace during tough times.
