For no particular reason other than it’s a Tuesday and the small pleasures are the significant ones. Here’s why I adore them:

  2. Every time you dip your spoon into the top layer, it produces a gentle crackle, ensuring that every bite combines gooey brownie with a lightly chewy, crisped top. WOW, YES.

The original viral brownie pudding comes from Ina, of course. I’ve prepared it in its traditional, large batch form and it’s great fun. However, when I discovered this video for a single-serving version (brilliant) in ramekins (affiliate link), I knew this was the way to go. The way you can scoop your spoon around the ramekin to achieve the ideal blend of chewy and gooey? Ugh. So delicious. Is anyone else quirky like this?

The version you’re looking at here is somewhat of a blend of these two recipes, with enough batter to create two hearty servings (or 3-4 if you prefer them smaller).
