Do you remember the hot honey cottage cheese bowl craze from a while back?

There was a trend featuring sweet potatoes and ground beef topped with a spoonful of plain cottage cheese and drizzled with hot honey. My opinion: it always came off as a bit awkward. Just a spoonful of plain cottage cheese? Just… plain?! I wasn’t sold.

Let me explain: this is that same concept but significantly better. The cottage cheese is now transformed into a street corn-inspired dip, bursting with flavor that makes the entire bowl come together perfectly. I much prefer this over the original.

Instructions

  1. Prepare Street Corn Dip: Blend all ingredients together, adding the cottage cheese last to control the amount. Adjust seasonings to your taste. (This also serves as a snack while cooking, win-win.)
  2. Roast Sweet Potatoes: Toss the sweet potato cubes with olive oil and seasoning. Air fry at 375 degrees for 13 minutes until tender and golden. (You can also roast them on a sheet pan at 400 degrees for 25 minutes.)
  3. Ground Beef: Heat olive oil in a skillet over medium-high heat; add the ground beef in chunks, cooking until browned. Break into small pieces, then add taco seasoning and 2-3 tablespoons of water for extra sauce.
  4. Serve: Layer sweet potatoes and ground beef in a bowl. Top with corn dip. I always add pickled red onions, but it’s optional! Dipping with chips is delicious too.
