I genuinely believed it was my ultimate favorite sandwich until I prepared this one. GET READY, FOLKS. This focaccia grinder sandwich might surpass it! While filming this video, we devoured the whole sandwich right there and carried on about it for the rest of the afternoon.

The sandwich consists of:

  • Trader Joe’s roasted tomato focaccia, once more
  • Pesto
  • Salami and capicola
  • Provolone cheese

  • Pepperoncini for a kick
  • A final spread of mayo before you finish it up!

This is when this sandwich truly shines. It’s a quick dinner option and also an ideal party food. Just one simple and seamless preparation (and by “prep” I mean layering), and a quick cut into wedges, and you’ve got a meal that brings joy to everyone.

I acquired the pesto, Italian dressing, and focaccia all from Trader Joe’s (not sponsored, just a big fan) – so while you could use other brands, I clearly suggest the Trader Joe’s offerings, they are delightful.

This is phenomenal. Trader Joe’s roasted tomato focaccia stacked with pesto, salami, capocollo, Provolone, pepperoncini, and a shredded, zesty Italian salad. Absolutely incredible.

Instructions

  1. Preheat the oven to 350 degrees.
  2. Keeping the focaccia flat, use a serrated knife to slice the focaccia in half horizontally. (Avoid tipping the bread, or the toppings will fall off.) Set the top half of the bread aside.
  3. Spread pesto on the bottom piece of focaccia. Then layer with salami, capocollo, and Provolone.
  4. Toast in the oven for 6-8 minutes. (Keep the top piece aside to prevent sticking to the cheese.)
  5. In a separate bowl, toss together lettuce, red onion, pepperoncini, Italian dressing, and oregano. Season with salt and pepper. Place the salad on top of the toasted sandwich. Add a dollop of mayo (optional, but I highly recommend it).
  6. Press the top piece of focaccia onto the sandwich and slice into wedges! WOW, THAT’S DELICIOUS. It’s juicy, crunchy, salty, dense, and everything I desire in a sandwich!
