The Carrot Soup + Topping Duo I Didn’t Realize I Needed

This duo is extraordinary. Amazing. We prepared this for dinner recently and it was fantastic.

Two key components:

  1. a smooth carrot soup (imagine coconut milk, madras curry powder, onions, and carrots) – nearly 5 ingredients and super simple
  2. an equally simple savory ground beef skillet with toasted pine nuts and lemon zest

And then (stay tuned) we’re placing the spiced beef and pine nuts atop the soup. Along with some thinly sliced shallots, a swirl of yogurt, and dipping into that delight with warm flatbread! It is beautiful, graceful, and layered with maximum textures and flavors (savory, toasty, bright, warming, all the good stuff)! I relish every single dunk of that bread into the creamy carrot soup.

My children enjoy that it’s a build-your-own scenario (which, for them, mainly involves soup and bread). In the meantime, Bjork and I indulge a bit with toppings, feeling like we’re dining out in a fun restaurant. Wins all around! I hope you appreciate it!
