Folks, this cottage cheese pancake is truly extraordinary.

With a soufflé-like consistency and a golden, buttery exterior paired with soft, rich interiors – I never imagined I would enjoy something like this to such an extent (what?! cottage cheese! not again!). However, whipping up one of these pancakes for myself after sending the kids off to school is an absolute joy and treat in my life currently.

This is meant for one person, and frying it in butter is a must, as it’s a rule. With the appropriate heat, it develops this beautiful golden, crispy outer layer, resembling a pancake you’d find at a posh brunch place in New York City. Only… it’s in your own kitchen. In your pajamas.

I don’t whip up this pancake for health reasons – I simply adore its flavor and texture. Yet, I know many of us keep protein in mind, and this lovely recipe provides a solid 15 grams of protein for us. Much appreciated!
