Folks, this cottage cheese pancake is quite extraordinary.

It possesses a souffle-like texture with a golden, buttery edge and fluffy, decadent insides – and I never imagined I would enjoy something like this so deeply (what?! cottage cheese! not again!). But preparing one of these pancakes for myself after sending the kids off to school brings immense joy to my daily routine.

This pancake is designed for one, and it must be cooked in butter, as per the rules. At the perfect temperature, it achieves a gorgeous, crispy, stunning outer layer, resembling a pancake you would find in a fancy brunch place in New York City. Except… it’s you. At home. In your pajamas.

I don’t prepare this pancake for health benefits – I simply adore the flavor and texture. However, many of us consider protein, and this beauty delivers a solid 15 grams of protein. Much appreciated, ma’am!
