First off, I must say this salmon shouldn’t be this amazing. It’s just thrown onto that sheet pan – no chopping, no extensive prep. Then it gets covered with mayo and Dijon and baked for just about 7 minutes. A sprinkle of red pepper flakes, a dash of dill, a squeeze of lemon. So effortless, and yet. Wow, just wow.
And can we take a moment to appreciate those dill potatoes!! Double exclamation!!
They are steamed to perfection and then tossed in garlic butter with just the right amount of dill (which is always the right amount of dill).
I made them and instantly texted numerous friends: “you must try these!!”
You can serve the entire sheet pan at the table (which we often do), or move it to a large platter for serving:

- Prep the Potatoes: Preheat the oven to 450 degrees. Combine potatoes, oil, and salt on a sheet pan. Add water directly to the pan.
- Roast the Potatoes: Roast the potatoes for 30 minutes. Stir every 10-15 minutes to prevent them from sticking. During this time the water will evaporate, steaming the potatoes while they get nicely browned. (Some sticking is typical and okay – just use a good spatula to firmly lift the potatoes and keep them moving around for even roasting.)
- Prep the Salmon: Shift potatoes to one side. Place the salmon fillet in the center of the sheet pan, skin side down. Sprinkle with 1/2 teaspoon of salt. Combine mayo and Dijon in a small dish; spread over the top. Bake for 6 minutes. Then broil close to the top of the oven for 2-3 more minutes for browning. Bake until it easily flakes apart – see notes.
- Garlic Butter: Combine melted butter, grated garlic, and dill; spoon over the hot potatoes. Add dill and red pepper flakes to the salmon.
- You’re Done! Squeeze lemon over everything. Flake large pieces of salmon to serve alongside the potatoes. Incredible.

Salmon Doneness: Internal temperature for salmon can vary from around 125 to 145 degrees Fahrenheit (to personal preference). I don’t typically check the temp of my salmon. I source salmon from trusted vendors who ensure safe handling and cook it until it flakes easily and appears juicy (refer to photos and video). To follow USDA guidelines, you can cook it to 145 degrees – though many chefs favor salmon cooked at a slightly lower temperature (like 130 degrees) to maintain its buttery tenderness.
