  • A quick massage! Just like with kale. You’ll actually see the broccoli’s color brighten. You’re giving it a wake-up call!
  • A splash of water! This water generates a steaming effect while roasting, keeping the broccoli tender and fluffy while also getting crispy! And I find this utterly exciting!

We pair this air fryer broccoli with every meal possible. It’s perfect alongside Marry Me Chicken, Date Night Rigatoni, Tomato Soup with grilled cheese, and even dipped in this incredible Gochujang Sauce.   1. Prep The Broccoli: Place florets in a bowl. Add water, oil, and salt. Break into bite-sized pieces and gently massage for 30-60 seconds, until the broccoli brightens slightly. You want it to absorb some of that water and oil mixture!

  2. Cook: Add broccoli to the air fryer. (There will still be a little water in the bowl; that’s perfectly fine.) Air fry at 350 for 5 minutes; give it a quick shake. It should be vibrantly green, resembling steamed broccoli.

  3. Crisp It Up: Air fry at 375 for an additional 2 minutes. Now it should start to appear browned, crispy, and roasty toasty. (You can tweak the time and temperature to achieve your preferred crispiness)
  4. Finish: You’re done! Yum! It’s fluffy and soft, yet crispy and browned at the same time. I adore this with a dipping sauce or just a sprinkle of Parmesan.

You can skip the bowl part if you prefer and do this all directly in the air fryer – just massage the broccoli with oil and salt right in the basket. Then pour the water into the air fryer, so it collects below the grates and stays there during cooking. This is another way to achieve a very similar result (and save a dish).

All air fryers differ in both capacity and temperature. You may want to prepare this in smaller batches depending on your air fryer’s size. I use this air fryer.

If the broccoli overlaps in the basket at first, that’s okay – it will shrink in size to ultimately form a single layer during the last few minutes of roasting.

If you’re roasting at 375 and not achieving enough crispiness, increase to 390 or 400!

No basket air fryer? No problem! Just follow step 1 and then move to a baking sheet. Think of this as “marinating” the broccoli with some moisture. It will retain that moisture (even without complete absorption) and assist in keeping it tender while roasting.
