It’s a Snack, It’s a Breakfast… We Love Them.

A while back, I stumbled upon a video by Dini at Prep and Rally where she took an almond flour tortilla and gave it the delightful French Toast Treatment!

The tortilla is dipped in an egg mixture with a dash of maple syrup (and milk, if you’re like me) and pan-fried into pliable little golden discs that have the look of a crepe, yet offer a touch of French Toast too?

Is it a tad absurd? Yes! Just roll with it!

It was a fun, adorable video, but this is one of those recipes we revisit time and again in our home. I whip them up about every 1-2 weeks now. I’ve already spotted numerous posts from those of you who’ve made them on Instagram! These are the tortillas I rely on:

My daughters enjoy these for breakfast, and I do too – but they’ve also unexpectedly become a hit as a snack and for lunchboxes! After French Toasting the tortillas, just roll them up with jam and yogurt and store them in the fridge for a quick snack! (No, it’s not a ham and cheese roll, it’s jam and yogurt – but never say never!)

Whisk together your egg mixture.

Just like French Toast! Eggs, maple syrup, and a dash of milk or cream.

Coat the tortillas.

I exclusively use the Siete almond flour tortillas for this recipe. They may not soak up the mixture significantly, but they get nicely coated!

Pan fry and wrap.

I prefer to melt a bit of butter in the pan, then pan fry those crepes on both sides until beautifully golden!

Wrap, top, and enjoy!
