Cranberry Salsa, You Are My Latest Favorite Holiday App.

My pal Amanda has a stunning recipe for a dip featuring cranberry salsa and cream cheese. I’ve admired it for years, and this was finally the year I tried it. ABSOLUTELY LOVE IT!

It’s finely textured, juicy, refreshing, sweet, and has a slight kick from the jalapeño.

While there are many cranberry salsa or cranberry relish recipes out there, the distinguishing feature of hers is that she includes a piece of fresh ginger. Wow! So delightful.

I brought her dip along on a platter with the creamy foundation to a holiday gathering in our area, and it was superb. Gorgeous. Truly fantastic. But upon returning home, Bjork and I headed straight to the refrigerator just for the extra cranberry salsa – devouring it straight, all by itself, dipping chips into it like famished little wolves.

The most enjoyable part was that in the following days, I ended up using that cranberry salsa on EVERYTHING – a dollop atop a turkey wrap with spinach and mayo. A spread on my toast. A spoonful tossed into my chicken and rice bowl.

So, here’s the recipe for the salsa, as I prepared it – I only made a few minor adjustments to Amanda’s recipe, most notably swapping garlic for green onions (which we prefer in this home), adding some extra parsley, and incorporating a good amount of pistachios for added richness and a buttery crunch.

It’s definitely edible fresh, but don’t overlook the chilling time in the fridge for some Day 2 magic. It becomes a touch less tangy and significantly more juicy.

Instructions

  1. Chop Cranberries: Pulse cranberries in a food processor until they reach a finely chopped consistency, being cautious not to overly-process or puree them. Transfer to a bowl. 
  2. Mix in Sugar: Combine the cranberries with sugar.
  3. Chop Aromatics and Blend: Add jalapeño, ginger, garlic, and cilantro into the food processor; pulse until finely chopped. Incorporate into the cranberry bowl; add lime juice, zest, and salt.
  4. Allow to Rest (Optional): Let the salsa settle for 12-24 hours, if possible! This allows the cranberries to soften and become super juicy, and the flavors to meld beautifully!
  5. Optional Addition: incorporate pistachios into the same food processor, pulse until finely chopped, and mix into the cranberry salsa just prior to serving. 

Notes

My jalapeños have been exceedingly spicy lately – I put half a jalapeño into my last batch and it was still very spicy! If you’re sensitive to heat, I recommend using just a tiny piece of jalapeño. Also, ensure to remove all the ribs and seeds of the jalapeño as that holds most of the heat.

If you wish to avoid purchasing both herbs, I’ve made this using only cilantro or only parsley, and it works excellently both ways!
