  • olive oil – I prefer using a quality olive oil that doesn’t need to be pricey, just ensure it’s cold-pressed and organic for optimal flavor (in my view).
  • white wine vinegar – this brings a pleasant tangy flavor and some zest to the dressing. You can also substitute with apple cider vinegar or champagne vinegar.
  • parmesan cheese – this is essential in this dressing and imparts wonderful depth of flavor; just ensure you’re using grated parmesan cheese.
  • dijon mustard – this provides a bit of zest and assists in emulsifying the dressing.
  • honey – you just need one teaspoon, and a small amount goes a long way! This helps balance out the acidity from the vinegar and the savory notes. You could also use maple syrup or another natural sweetener instead of honey.
